A quick and easy recipe for Beef and Pepper Rice Bowls, perfect for a weeknight dinner.
Ingredients
- 2 tablespoons butter
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 jalapeno, diced
- 1 pound ground beef
- ½ cup soy sauce (can use low sodium)
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 2 teaspoons black pepper
- Optional: rice
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the diced onion, green bell pepper, red bell pepper, and jalapeno. Sauté until the vegetables are tender.
- Add the ground beef to the skillet and cook until browned.
- Stir in the soy sauce, garlic powder, salt, and black pepper. Cook for an additional 5 minutes.
- Serve the beef mixture over cooked rice, if desired.
Notes
- This dish can be made ahead and frozen for later use.
- For a low-carb option, substitute rice with cauliflower rice.
- Adjust the spice level by adding more or less jalapeno.
