Description

A quick and easy recipe for Beef and Pepper Rice Bowls, perfect for a weeknight dinner.


Ingredients

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, diced
  • 1 pound ground beef
  • ½ cup soy sauce (can use low sodium)
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • Optional: rice


Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the diced onion, green bell pepper, red bell pepper, and jalapeno. Sauté until the vegetables are tender.
  3. Add the ground beef to the skillet and cook until browned.
  4. Stir in the soy sauce, garlic powder, salt, and black pepper. Cook for an additional 5 minutes.
  5. Serve the beef mixture over cooked rice, if desired.

Notes

  • This dish can be made ahead and frozen for later use.
  • For a low-carb option, substitute rice with cauliflower rice.
