Description

A delicious and easy recipe for caramelized onion spaghetti squash, perfect for a low-carb vegetarian dinner.


Ingredients

  • 1 2-3 lb. spaghetti squash
  • 1/4 cup olive oil
  • 2 tbsp butter (dairy-free option available)
  • 2 medium yellow onions, peeled and sliced into longer strips
  • 1 1/2 cup mushrooms
  • 1 cup kale
  • 1/4 tsp rosemary (fresh or dried)
  • Salt and pepper to taste
  • Optional: sprinkle of parmesan cheese


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the cut sides and season with salt and pepper.
  4. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  5. While the squash is roasting, heat butter and olive oil in a large skillet over medium heat.
  6. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  7. Add mushrooms and kale to the skillet and cook until softened.
  8. Once the squash is done, scrape the flesh with a fork to create spaghetti-like strands.
  9. Combine the spaghetti squash with the caramelized onion mixture and toss to combine.
  10. Serve warm, topped with a sprinkle of parmesan cheese if desired.

Notes

  • For a vegan option, omit the parmesan cheese.
  • Feel free to add other vegetables or proteins as desired.
  • This dish can be made ahead of time and reheated.
