A comforting and creamy Cheesy Hamburger Potato Soup that combines ground beef, potatoes, and cheddar cheese for a hearty meal.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened.
- Add ground beef to the pot, cooking until browned. Drain excess fat if necessary.
- Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Once the potatoes are cooked, stir in the milk and heavy cream.
- Add shredded cheddar cheese, stirring until melted and well combined.
- Season with salt and pepper to taste. Serve hot.

- This soup can be made ahead of time and reheated.
- For a thicker soup, you can mash some of the potatoes.
