Description

A simple and delicious recipe for no-bake chocolate peanut butter oatmeal bars that are chewy and perfect for a healthy snack.


Ingredients

  • 1 cup (2 sticks) unsalted butter
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
  • ½ cup peanut butter (creamy)


Instructions

  1. In a large saucepan over medium heat, melt the butter. Stir in the brown sugar and vanilla extract until combined. Add the oats and cook for 2–3 minutes, stirring constantly, until the oats are well coated and slightly toasted.
  2. Press half of the oatmeal mixture into a greased or parchment-lined 8×8-inch pan. Use the back of a spoon or a spatula to flatten it evenly.
  3. In a small saucepan (or microwave-safe bowl), melt the chocolate chips and peanut butter together over low heat (or in short 20-second bursts in the microwave), stirring until smooth and fully combined.
  4. Pour the chocolate-peanut butter mixture over the oatmeal base and spread evenly. Crumble the remaining oat mixture over the top and gently press down.
  5. Refrigerate for 2–3 hours, or until firm.
  6. Cut into squares and enjoy chilled or at room temperature.

Notes

  • For a richer flavor, use dark chocolate chips.
  • These bars can be stored in the refrigerator for up to a week.
