A delicious and creamy soup made with chicken and sweet potatoes, perfect for a comforting meal.
Ingredients
- 1 tablespoon olive oil
- 1 lb boneless skinless chicken breasts, cut into 1/2-in cubes
- 1 medium yellow onion, finely diced
- Kosher salt and pepper
- 2 tablespoons unsalted butter
- 2 medium cloves garlic, minced
- 3 tablespoons all-purpose flour
- 1-1/2 cups 2% or skim milk
- 1/2 cup heavy whipping cream
- 2-1/2 cups chicken broth
- 1-1/2 lbs sweet potatoes, peeled and cut into 1/2-in cubes
- 1 tablespoon minced fresh thyme
- 2 cups packed baby spinach or chopped kale
- Crusty bread for serving, optional
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned.
- Add diced onion, salt, and pepper; sauté until onion is translucent.
- Stir in butter and garlic, cooking until fragrant.
- Sprinkle flour over the mixture and stir to combine.
- Gradually whisk in milk and cream, followed by chicken broth.
- Add sweet potatoes and thyme; bring to a simmer.
- Cook until sweet potatoes are tender, about 15-20 minutes.
- Stir in spinach or kale until wilted.
- Serve hot with crusty bread, if desired.
Notes
- For a thicker soup, add more flour.
- Can substitute chicken with turkey for a different flavor.
