Description

A delicious and creamy soup made with chicken and sweet potatoes, perfect for a comforting meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken breasts, cut into 1/2-in cubes
  • 1 medium yellow onion, finely diced
  • Kosher salt and pepper
  • 2 tablespoons unsalted butter
  • 2 medium cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1-1/2 cups 2% or skim milk
  • 1/2 cup heavy whipping cream
  • 2-1/2 cups chicken broth
  • 1-1/2 lbs sweet potatoes, peeled and cut into 1/2-in cubes
  • 1 tablespoon minced fresh thyme
  • 2 cups packed baby spinach or chopped kale
  • Crusty bread for serving, optional


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned.
  2. Add diced onion, salt, and pepper; sauté until onion is translucent.
  3. Stir in butter and garlic, cooking until fragrant.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Gradually whisk in milk and cream, followed by chicken broth.
  6. Add sweet potatoes and thyme; bring to a simmer.
  7. Cook until sweet potatoes are tender, about 15-20 minutes.
  8. Stir in spinach or kale until wilted.
  9. Serve hot with crusty bread, if desired.

Notes

  • For a thicker soup, add more flour.
  • Can substitute chicken with turkey for a different flavor.
