A delicious and creamy Italian sausage soup that is easy to make and perfect for a comforting meal.
Ingredients
- 16 ounces Italian sausage
- 1/4 cup butter (1/2 stick)
- 1/2 medium onion, chopped small
- 2 sticks celery, chopped small
- 2 cloves garlic, minced
- 6 tablespoons flour
- 4 cups low sodium chicken broth
- 2 cups half-and-half
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 pound Russet potatoes, peeled & diced small
- Salt & pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, melt the butter and sauté the onion, celery, and garlic until softened.
- Stir in the flour and cook for 1-2 minutes.
- Add the chicken broth gradually, stirring constantly to avoid lumps.
- Stir in the half-and-half, Worcestershire sauce, and crushed red pepper flakes.
- Add the diced potatoes and return the cooked sausage to the pot.
- Simmer until the potatoes are tender, about 15-20 minutes.
- Season with salt and pepper to taste before serving.
Notes
- This soup can be made in advance and reheated.
- For a thicker soup, add more flour or reduce the amount of broth.
- Feel free to add other vegetables like spinach or kale for added nutrition.
