Description

A delicious and creamy Italian sausage soup that is easy to make and perfect for a comforting meal.


Ingredients

  • 16 ounces Italian sausage
  • 1/4 cup butter (1/2 stick)
  • 1/2 medium onion, chopped small
  • 2 sticks celery, chopped small
  • 2 cloves garlic, minced
  • 6 tablespoons flour
  • 4 cups low sodium chicken broth
  • 2 cups half-and-half
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 pound Russet potatoes, peeled & diced small
  • Salt & pepper to taste


Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, melt the butter and sauté the onion, celery, and garlic until softened.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Add the chicken broth gradually, stirring constantly to avoid lumps.
  5. Stir in the half-and-half, Worcestershire sauce, and crushed red pepper flakes.
  6. Add the diced potatoes and return the cooked sausage to the pot.
  7. Simmer until the potatoes are tender, about 15-20 minutes.
  8. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made in advance and reheated.
  • For a thicker soup, add more flour or reduce the amount of broth.
  • Feel free to add other vegetables like spinach or kale for added nutrition.
