Description

A comforting and easy-to-make lasagna soup that combines all the flavors of traditional lasagna in a warm, hearty bowl.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground thyme
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion, green bell pepper, and minced garlic to the pot. Sauté until the vegetables are tender.
  3. Stir in the ground thyme, crushed tomatoes, and beef broth. Bring to a boil.
  4. Add the broken lasagna noodles and cook until al dente, about 10 minutes.
  5. In a separate bowl, mix the ricotta cheese with salt and pepper.
  6. Serve the soup in bowls, adding a dollop of ricotta cheese on top, and sprinkle with mozzarella and Parmesan cheese.

Notes

  • This soup can be made in advance and stored in the refrigerator for up to 3 days.
  • For a healthier version, use lean ground turkey or chicken.
