Ingredients
- 1 package frozen hash brown potatoes (32oz package)
- 1 small yellow onion, diced
- 2 cans chicken broth (14.5oz cans)
- 1 can cream of chicken soup (10.75oz can)
- ½ cup unsalted butter
- 1 ½ cups sharp cheddar cheese, shredded
- 1 cup sour cream
- ½ tsp salt
- ½ tsp pepper
Instructions
- In a large pot, melt the butter over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in the frozen hash browns and cook for a few minutes.
- Add the chicken broth and cream of chicken soup, stirring to combine.
- Bring the mixture to a simmer and cook for about 15 minutes.
- Stir in the shredded cheddar cheese and sour cream until melted and smooth.
- Season with salt and pepper to taste.
