A delicious and easy-to-make casserole that combines the classic flavors of meatloaf and mac and cheese, perfect for a family-friendly meal.
Ingredients
- Ground Beef: 1 lb
- Onion: 1/2 cup, diced
- Breadcrumbs: 1/2 cup
- Egg: 1 large
- Milk: 1/4 cup
- Salt: 1 tsp
- Pepper: 1/2 tsp
- Macaroni: 2 cups, uncooked
- Cheddar Cheese: 2 cups, shredded
- Butter: 2 tbsp
- Flour: 2 tbsp
- Milk: 2 cups
- Salt: 1/2 tsp
- Pepper: 1/4 tsp
- Paprika: 1/2 tsp
- Dry Mustard: 1/2 tsp
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, diced onion, breadcrumbs, egg, 1/4 cup milk, 1 tsp salt, and 1/2 tsp pepper. Mix well and form into a loaf.
- Place the meatloaf in a greased baking dish and bake for 30 minutes.
- While the meatloaf is baking, cook the macaroni according to package instructions; drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in 2 cups of milk, cooking until the mixture thickens.
- Add 1/2 tsp salt, 1/4 tsp pepper, paprika, and dry mustard to the sauce. Stir in the shredded cheddar cheese until melted.
- Combine the cooked macaroni with the cheese sauce and mix well.
- After 30 minutes, remove the meatloaf from the oven and spread the mac and cheese mixture over the top.
- Return to the oven and bake for an additional 15-20 minutes, until heated through and golden on top.
- Let cool for a few minutes before serving.
Notes
- For extra flavor, add your favorite spices to the meatloaf mixture.
- Feel free to substitute different types of cheese for a unique twist.
- This dish can be made ahead of time and stored in the refrigerator before baking.
