Description

A comforting and creamy Polish potato soup that is perfect for a cozy meal, featuring Yukon Gold potatoes and optional kielbasa.


Ingredients

  • 4 medium Yukon Gold or Russet potatoes, peeled and diced
  • 2 large carrots, peeled and sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 5 oz kielbasa (optional/diced)
  • 1 cup heavy cream (or tempered sour cream)
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the diced potatoes and sliced carrots to the pot.
  3. Pour in the chicken or vegetable broth and bring to a boil.
  4. Reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
  5. If using, add the diced kielbasa and cook for an additional 5 minutes.
  6. Stir in the heavy cream (or tempered sour cream) and fresh dill.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

  • For a tangy flavor, use tempered sour cream instead of heavy cream.
  • Adjust the thickness of the soup by adding more or less broth.
  • Garnish with additional dill or croutons if desired.
