Description
A comforting and creamy Polish potato soup that is perfect for a cozy meal, featuring Yukon Gold potatoes and optional kielbasa.
Ingredients
- 4 medium Yukon Gold or Russet potatoes, peeled and diced
- 2 large carrots, peeled and sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 5 oz kielbasa (optional/diced)
- 1 cup heavy cream (or tempered sour cream)
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the diced potatoes and sliced carrots to the pot.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
- If using, add the diced kielbasa and cook for an additional 5 minutes.
- Stir in the heavy cream (or tempered sour cream) and fresh dill.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For a tangy flavor, use tempered sour cream instead of heavy cream.
- Adjust the thickness of the soup by adding more or less broth.
- Garnish with additional dill or croutons if desired.
