Description

A quick and healthy shrimp stir-fry featuring fresh asparagus and mushrooms, perfect for a weeknight dinner.


Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed, cut into 1-inch pieces)
  • 1 cup mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
  4. Stir in asparagus and mushrooms, and cook for an additional 3-4 minutes until vegetables are tender.
  5. Season with salt, black pepper, soy sauce, and lemon juice. Stir well to combine.
  6. Remove from heat and serve immediately.

Notes

  • For a spicier dish, add red pepper flakes.
  • Serve over rice or noodles for a complete meal.
