Description
A quick and healthy shrimp stir-fry featuring fresh asparagus and mushrooms, perfect for a weeknight dinner.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 1 bunch asparagus (trimmed, cut into 1-inch pieces)
- 1 cup mushrooms (sliced)
- 2 garlic cloves (minced)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp soy sauce
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
- Stir in asparagus and mushrooms, and cook for an additional 3-4 minutes until vegetables are tender.
- Season with salt, black pepper, soy sauce, and lemon juice. Stir well to combine.
- Remove from heat and serve immediately.
Notes
- For a spicier dish, add red pepper flakes.
- Serve over rice or noodles for a complete meal.
- Feel free to substitute other vegetables like bell peppers or snap peas.
