Description
A hearty and spicy soup made with sausage, potatoes, and kale, perfect for a comforting meal.
Ingredients
- 2 tbsp olive oil
- 2 chorizo or andouille sausage links, casing removed
- 3/4 cup yellow onion, diced
- 1/2 cup carrot, sliced
- 1/4 cup celery, sliced
- 2 tsp smoked paprika
- 2 garlic cloves, minced
- 1 lb. yukon gold or red potatoes, diced
- 2 cups kale, stems removed
- 32 oz. chicken broth
- 1 cup water
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the sausage and cook until browned.
- Add the onion, carrot, and celery; sauté until softened.
- Stir in the smoked paprika and garlic, cooking for an additional minute.
- Add the diced potatoes, kale, chicken broth, and water; bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier kick, add red pepper flakes.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- Feel free to substitute the sausage with a vegetarian option for a meatless version.
