Description

A hearty and spicy soup made with sausage, potatoes, and kale, perfect for a comforting meal.


Ingredients

  • 2 tbsp olive oil
  • 2 chorizo or andouille sausage links, casing removed
  • 3/4 cup yellow onion, diced
  • 1/2 cup carrot, sliced
  • 1/4 cup celery, sliced
  • 2 tsp smoked paprika
  • 2 garlic cloves, minced
  • 1 lb. yukon gold or red potatoes, diced
  • 2 cups kale, stems removed
  • 32 oz. chicken broth
  • 1 cup water
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sausage and cook until browned.
  3. Add the onion, carrot, and celery; sauté until softened.
  4. Stir in the smoked paprika and garlic, cooking for an additional minute.
  5. Add the diced potatoes, kale, chicken broth, and water; bring to a boil.
  6. Reduce heat and simmer until the potatoes are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier kick, add red pepper flakes.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
