Description

A healthy and easy recipe for Turkey Sweet Potato Soup that combines lean ground turkey with sweet potatoes and spices for a delicious one-pot meal.


Ingredients

  • 2 tablespoons oil
  • 1 pound (454 g) 93% lean ground turkey
  • 2 cups (282 g) chopped onion (about 1 large onion)
  • 1 ½ teaspoons kosher salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ½ teaspoon coriander
  • 4 cups (586 g) sweet potato cubes, ½ inch in diameter (about 1 very large sweet potato)
  • 1 cup (184 g) long-grain white rice, rinsed
  • 6 – 8 cups (1.41.9 L) broth, any type (turkey, chicken, beef, etc.)


Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the ground turkey and cook until browned.
  3. Add the chopped onion, salt, pepper, paprika, cumin, and coriander; sauté until the onion is translucent.
  4. Add the sweet potato cubes and rice, stirring to combine.
  5. Pour in the broth and bring to a boil.
  6. Reduce heat and simmer until the sweet potatoes and rice are tender, about 20-25 minutes.
  7. Taste and adjust seasoning if necessary before serving.

Notes

  • For a richer flavor, use homemade broth.
  • Feel free to add other vegetables like carrots or celery.
  • This soup can be stored in the refrigerator for up to 3 days.
