Description

A simple and delicious recipe for green beans sautéed with mushrooms, perfect as a healthy side dish for any meal.


Ingredients

  • 1 1/2 pounds fresh green beans, trimmed
  • 1 teaspoon Diamond Crystal kosher salt, plus more as needed
  • 1/4 teaspoon fresh black pepper
  • 8 ounces cremini mushrooms, cut into thick slices
  • 1 small red onion, halved and thinly sliced
  • 1 1/2 tablespoons unsalted butter, cut into a few pieces
  • 3/4 cup low-sodium chicken stock, plus more as needed


Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the sliced red onion and sauté until softened.
  3. Add the mushrooms and cook until they are browned.
  4. Stir in the green beans, salt, and pepper.
  5. Pour in the chicken stock and cover the skillet.
  6. Cook until the green beans are tender, about 5-7 minutes.
  7. Remove the lid and cook for an additional 2-3 minutes to reduce the liquid if necessary.
  8. Adjust seasoning with more salt and pepper if needed before serving.

Notes

  • This dish can be made with shallots instead of red onion for a different flavor.
  • For a creamy version, add a splash of cream at the end of cooking.
