A simple and delicious recipe for green beans sautéed with mushrooms, perfect as a healthy side dish for any meal.
Ingredients
- 1 1/2 pounds fresh green beans, trimmed
- 1 teaspoon Diamond Crystal kosher salt, plus more as needed
- 1/4 teaspoon fresh black pepper
- 8 ounces cremini mushrooms, cut into thick slices
- 1 small red onion, halved and thinly sliced
- 1 1/2 tablespoons unsalted butter, cut into a few pieces
- 3/4 cup low-sodium chicken stock, plus more as needed
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the sliced red onion and sauté until softened.
- Add the mushrooms and cook until they are browned.
- Stir in the green beans, salt, and pepper.
- Pour in the chicken stock and cover the skillet.
- Cook until the green beans are tender, about 5-7 minutes.
- Remove the lid and cook for an additional 2-3 minutes to reduce the liquid if necessary.
- Adjust seasoning with more salt and pepper if needed before serving.
Notes
- This dish can be made with shallots instead of red onion for a different flavor.
- For a creamy version, add a splash of cream at the end of cooking.
