Description

A delicious and easy recipe for Million Dollar Spaghetti Squash Pasta, perfect for a low-carb and high-protein meal.


Ingredients

  • 1 large spaghetti squash
  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  4. In a skillet, brown the ground beef over medium heat, seasoning with salt, pepper, and Italian seasoning.
  5. Once the beef is cooked, stir in the marinara sauce and let it simmer for a few minutes.
  6. In a large bowl, combine the cooked spaghetti squash strands, ricotta cheese, and half of the mozzarella cheese.
  7. Mix in the beef and marinara sauce mixture until well combined.
  8. Transfer the mixture to a baking dish and top with the remaining mozzarella and Parmesan cheese.
  9. Bake for 20-25 minutes until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • For a vegetarian option, substitute ground beef with sautéed vegetables or lentils.
  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
