A delicious and easy recipe for Million Dollar Spaghetti Squash Pasta, perfect for a low-carb and high-protein meal.
Ingredients
- 1 large spaghetti squash
- 1/2 lb lean ground beef
- 24 oz marinara sauce
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- In a skillet, brown the ground beef over medium heat, seasoning with salt, pepper, and Italian seasoning.
- Once the beef is cooked, stir in the marinara sauce and let it simmer for a few minutes.
- In a large bowl, combine the cooked spaghetti squash strands, ricotta cheese, and half of the mozzarella cheese.
- Mix in the beef and marinara sauce mixture until well combined.
- Transfer the mixture to a baking dish and top with the remaining mozzarella and Parmesan cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a vegetarian option, substitute ground beef with sautéed vegetables or lentils.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
